Loaded flatbread with Do Goodly Red Pepper
Ingredients
Here’s a simple and healthy recipe for a Loaded Flatbread with a base of Do Goodly Red Pepper Dip, topped with cooked mushrooms, red onion, and cherry tomatoes.
For the Topping:
- 1 pot of Do Goodly Red Pepper Dip
 - 1 cup of mushrooms of your choice
 - 1 small red onion, thinly sliced
 - 1 cup cherry tomatoes, halved
 - 1 tbsp olive oil (for cooking the mushrooms and onions)
 - Salt and pepper, to taste
 - Fresh basil (optional, for garnish)
 
Method
Instructions:
1. Cook the Mushrooms and Red Onion:
- Heat 1 tablespoon of olive oil in a pan over medium heat.
 - Add the sliced mushrooms and red onion. Season with salt and pepper. Cook for 5-7 minutes, stirring occasionally, until the mushrooms release their moisture and become tender, and the onions are soft and slightly caramelised. Set aside.
 
2. Warm the flatbread until got a crispy outer texture
3. Assemble the Flatbread:
- Once the flatbread is cooked, spread a generous layer of Do Goodly Red Pepper Dip on top, leaving a small border around the edges.
 - Arrange the cooked mushrooms, red onion, and halved cherry tomatoes evenly on top of the red pepper dip.
 - Garnish with fresh basil, if desired, for a pop of colour and extra flavour.
 - You can add more veggies like spinach or zucchini slices for more variety.
