Method

Fiesta in a bowl! Ready to upgrade your pasta night? This One-Pot Taco Pasta is saucy, smoky and packed with flavour, thanks to a special kick from Do Goodly Harissa Spiced Salsa. It’s the ultimate fusion dish that comes together in just one pot.

Serves 4, with 47g of protein and 21g of fibre per serving, before toppings.

  1. Add the chopped onions to a large pot and cook for 2 minutes over medium heat.
  2. Add the taco seasoning and cook for another minute, stirring well.
  3. Add the remaining ingredients, except for the spinach and toppings. Cook, partially covered, for about 10 minutes or until the pasta is al dente. Stir frequently to prevent the pasta from sticking.
  4. Stir in the chopped spinach during the final minute of cooking to wilt.
  5. Serve in bowls, topped with a generous dollop of Do Goodly Harissa Spiced Salsa, soya yoghurt and chopped fresh tomatoes. Enjoy!
