Arrange a liberal amount of Tasty Tomato & Bean Houmous on base of plate, next place the fired courgette pieces on the houmous. In a separate bowl mix some finely sliced fennel, preserved lemon and rocket, dress with a little of the rapeseed oil and lemon juice, don’t forget salt and pepper and place with courgettes on the plate. Enjoy with a nice cold glass of Chablis.
